Avial


BISMILLAH HIR RAHMAN NIR RAHEEM


Ingredients:

Mixed vegetables of equal amount of Ashgourd, carrot, snake gourd, brinjal, potato, yam, beans.
Green chillies - 6
Fresh coconut - 3 tbsp
Cumin seeds - 1/2 tsp
Turmeric Powder - 1/2 tsp
Curd - 1 cup
Coconut oil - 1 tbsp
Curry leaves - a few
Salt to taste

Method:

- Clean and cut all the vegetables into long and thin two inch pieces.
- Boil the vegetables, two green chillies, turmeric powder with half a cup of water.
- Add salt once the vegetables are cooked.
- Grind coconut green chillies and cumin seeds.
- Stir the paste into the cooked vegetables.
- Add the curds and curry leaves and turn off flame after a minute. 
- Stir in the coconut oil gently, taking care notto mash the vegetables.
- Serve with rice or chapatis.
