Khobryachi Wadi


BISMILLAH HIR RAHMAN NIR RAHEEM
Ingredients:
1 coconut grated
2 cups sugar
1-2 tbsp pure ghee
1 tsp elaichi powder
Saffron 1 tsp (optional)

Method:

- Take a deep bottomed vessel. 
- Add ghee when vessel is hot. 
- Add grated coconut and stir to mix the ghee. 
- Cook on medium flame. 
- Add sugar and mix well. 
- As sugar liquefies, keep stirring continuously to prevent the mixture from sticking to the vessel. 
- Add saffron water if color is required. 
- When the mixture is cooked well it leaves the surface of the vessel along the sides. 
- Transfer the mixture to a wide brimmed, flat bottomed vessel and keep to cool. 
- Cut into diamond shaped pieces and serve.

Kozhikaal


BISMILLAH HIR RAHMAN NIR RAHEEM


A malabar speciality, whose name translates as 'chicken feet' in malyalam, this is actually made out of tapioca in north kerala, and the dish is widely found in kozhikode and thalassery region. The fresh fried fritters can be found in almost any "thattukada" or roadside eatery in the region. "If you visit any teastall in the afternoon, you will be greeted by the smell of freshly fried kozhikaal. Thattuadas are very popular in kerala and the government is also promoting the snack now," says home chef sandeep sreedharan

Ingredients:

Tapioca sliced into thin strips - 250 gms
Coconut oil for frying - 1/2 ltr
Gram flour (besan) - 1 cup
Rice flour - 1/2 cup
Water - 1 cup

Spice mix:

Garlic crushed and chopped - 5 - 6
Kashmiri chilly powder - 2 tbsp
Black pepper powder - 1 pinch
Turmeric  - 1 tsp
Jeera powder - 1/2 tsp
Asafoetida - 1/2 tsp
Green chillies - 3-4 less spicy ones chopped into thin circles
Curry leaves - 1 tbsp roughly chopped
Salt to taste


Method:

- Mix besan, rice flour and water to the consistency of dosa batter.
- Add the spice mix and blend well.
- Add sliced tapioca strips and mix in the batter. Mix it to coat well.
- Heat the coconut oil (it shouldn't smoke) at around 190 degree celsius.
- Take a few strips together from the batter and fry until crisp (for 3-4 minutes)
- Remove from oil and serve hot.

Avial


BISMILLAH HIR RAHMAN NIR RAHEEM


Ingredients:

Mixed vegetables of equal amount of Ashgourd, carrot, snake gourd, brinjal, potato, yam, beans.
Green chillies - 6
Fresh coconut - 3 tbsp
Cumin seeds - 1/2 tsp
Turmeric Powder - 1/2 tsp
Curd - 1 cup
Coconut oil - 1 tbsp
Curry leaves - a few
Salt to taste

Method:

- Clean and cut all the vegetables into long and thin two inch pieces.
- Boil the vegetables, two green chillies, turmeric powder with half a cup of water.
- Add salt once the vegetables are cooked.
- Grind coconut green chillies and cumin seeds.
- Stir the paste into the cooked vegetables.
- Add the curds and curry leaves and turn off flame after a minute. 
- Stir in the coconut oil gently, taking care notto mash the vegetables.
- Serve with rice or chapatis.

Vegetable Stew


BISMILLAH HIR RAHMAN NIR RAHEEM


Ingredients:

Mixed vegetables - 2 cups (carrots, potato, green peas, beans etc)
Onion - 1 sliced
Green Chillies - 4 sliced
Ginger - 1" sliced
Curry leaves
Whole black peppers - 1/2 tsp
Cinnamon  - 1" piece
Cloves - 3 - 4
Cardamom - 1
Ghee - 1 tbsp
Thick coconut milk - 1/2 cup
Thin coconut milk - 2 cups
Salt to taste

Method:

Cut vegetables into cubes and keep aside.
- Heat ghee in a pan and add crushed spices, sliced onions, ginger and green chillies. Fry for a    few minutes till onions are translucent. 
- Add vegetables and saute. 
- Pour the thin coconut milk, add salt and bring to boil. 
- Simmer till vegetables are tender.
- Add the thick coconut milk and remove from fire immediately. 
- Heat little ghee and add curry leaves. When leaves crackle pour the seasoning over the stew. - Serve with rice or chapatis.

Hot Chocolate


BISMILLAH HIR RAHMAN NIR RAHEEM


Ingredients:

3 cups milk
1/3 cup semi sweet chocolate grated
1 tbsp white sugar
1/2 tsp ground cinnamon
1 egg

Method:

- Put milk into a microwave safe container and cook on high in microwave for 2 minutes. 
- Mix in chocolate, sugar, and cinnamon. 
- In a small bowl, whisk an egg until smooth, then mix it into the chocolate mixture. 
- Return to microwave and cook on high for 3 to 4 minutes or until foamy ( be careful not to let it boil). 
- Whisk until smooth and pour into 3 mugs. 
- Garnish with a sprinkle of cinnamon if desired.

Icy Watermelongar


BISMILLAH HIR RAHMAN NIR RAHEEM

Ingredients:

4 cups watermelon juice
1/3 cup granulated sugar
1/4 cup fresh lemon juice

Method:

- Firstly you need to process pieces of watermelon in a food processor to extract its juice.
- Then under low temperature, heat the watermelon juice, lemon juice and sugar till the granules dissolve completely.
- Remember you shouldn't boil the concoction but only heat it at a steady temperature till there are no granules left. 
- Then pour the mix into a container and place in a freezer.
- Every half an hour, for the next two hours stir the mixture.
- Serve in individual bowls.

Orange Glorious


BISMILLAH HIR RAHMAN NIR RAHEEM

Ingredients:

1 cup milk
1 cup ice water
1 can frozen orange juice concentrate
12 cubes ice
1/4 teaspoon vanilla extract
1/8 cup white sugar

Method:

- In a blender combine milk, water, orange juice concentrate, ice cubes, vanilla and sugar.
- Blend until smooth. 

- Serve.
